Vegan Lentil Stew

Check out this recipe for a vegan lentil stew recipe that is based in Norwegian cuisine!

 

Ingredients:
1 cup lentils
34 oz. of water (which converts to 4 1/4 cups)
4 potatoes, diced
2-3 carrots, sliced
1/2 cup leek, sliced
1/2 teaspoon salt
1 large onion
2 1/2 tablespoons Better-Than-Bouillon

Instructions:
Combine water and salt in a saucepan; boil.
Wash lentils and add them to the boiling water.
Put the lid on, reduce heat, let simmer for 35 minutes.
Add the remainder of the ingredients and let simmer for another 25 minutes.
Serving ideas: serve with cranberry sauce, carmelized onions, flat bread, or just plain out of the pot.
