Slow Cooker Lemon Blueberry Oatmeal

Looking for one less thing to worry about on busy mornings? Put the ingredients for Slow Cooker Lemon Blueberry Oatmeal in the crock pot the night before and take making breakfast off tomorrow’s to-do list.

Ingredients:

  • 1 c. steel cut oats
  • 4 c. unsweetened coconut milk
  • 2 c. blueberries1 Tbsp. vanilla extract
  • 1 tsp. lemon extract
  • 4 tbsp. agave nectar

Instructions:

  1. Spray crock pot with cooking oil spray.
  2. Pour coconut milk into crock pot; then stir in steel cut oats, blueberries, vanilla extract, and lemon extract.
  3. Set the crock pot to low heat; cover and cook overnight.
  4. Stir in agave nectar and serve.
