- 1/3 cup raw cashews
- 1 cup frozen unsweetened strawberries, thawed and drained
- ½ cup strawberry juice (drained from the strawberries)
- ½ teaspoon salt
- 1 tablespoon lemon juice
- 5 tablespoons honey
- 1 12-ounce package firm tofu
- 1 teaspoon vanilla
Blend all ingredients in a blender. Chill and serve with fresh chopped fruit of your choice.
