For those who like an egg salad sandwich, here is a healthier alternative.
Ingredients:
• 1 box extra-firm silken tofu
• 1 stalk celery, finely diced
• 2 green onions, sliced
• 1 tsp. McKay’s chicken style seasoning, vegan
• 3 Tbsp. fresh dill, finely chopped
• 1/2 tsp. turmeric
• 1 Tbsp. fresh lemon juice
• 1 Tbsp. sweet relish
• 1/2 tsp. mustard
• 1/2 c. Vegenaise
• 4 leaves of lettuce
• 8 slices of bread, pita or wraps
Instructions:
1. In a medium mixing bowl, combine mashed tofu, celery, green onions, chicken style, turmeric, and dill and mix well.
2. Mix in mustard, relish, lemon juice and Vegenaise. Place a lettuce leaf in sandwich, then fill with tofu salad. Serve.
